Oliebollen

A New Year's tradition from my husband's side. This was my attempt and it didn't turn out too bad. Mine are a little more pointy than my Mother in Laws but they tasted pretty darn good.


Oliebollen
5 Cups Flour
1/4 Cup Sugar
1 tsp salt
cinnamon (to taste)
2 Cups raisins, currants/candied fruit combined
2 eggs
Lemon Juice
2 1/4 Cups luke warm milk.

In a large bowl combine 2 cups flour, sugar, cinnamon and yeast. Add milk and mix vigorously. Add eggs and lemon juice and mix well.

In medium bowl combine 3 cups flour and fruit.

Combine the two mixtures, they will be soft and sticky. Cover with a damp cloth and let rise in a warm place for 45 minutes or more. (I place in the oven with the door closed, light on and a 3 cups of boiling water) Heat oil in a deep fat \fryer and drop by the spoonful.


Remove from oil and let cool on a paper towel. Serve with a dusting or powdered sugar.
