Pumpkin Pie

3 cups vanilla ice cream
3 eggs
1 3/4 pumpkin puree
3/4 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
2 pie shells

Oven 425F

Whisk eggs, pumpkin, sugar, salt and spices. Mix in ice-cream until smooth. Bake 15 minutes, reduce to 350F for 30-40 minutes.

Pumpkin Cream Cheese Muffins

Borrowed from here

For the filling:
8 oz. cream cheese, softened
1 cup confectioners’ sugar

Beat and place in freezer to harden while you mix muffins

For the muffins (24)
3 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. ground cloves
1 tbsp. plus 1 tsp. pumpkin pie spice
1 tsp. salt
1 tsp. baking soda
4 large eggs
2 cups sugar
2 cups pumpkin puree
1¼ cups vegetable oil

Preheat oven to 350F and line muffin tins. Mix wet ingredients and stir in dry. Spoon about a teaspoon of batter into the bottom of each muffin tin. Add a bit of cream cheese and then cover with batter. Bake for 20-25 minutes.

Banana Chip Cookies

Delicious recipe found here




Followed the recipe exactly except used only chocolate chips and no nuts. They were delicious, moist and even better on day 2.

Lemon Poppyseed Cake

3 C flour
1 1/2 tsp baking soda
3/4 tsp salt
3/4 C butter
2 C sugar
3 eggs
1/2 C lemon juice (2-3 lemons)
3/4 C yogurt
3 tbsp lemon zest
1/4 C poppy seeds

Preheat oven to 350F, heavily grease and flour two 9x5 loaf pans.  (or 1 loaf pan and 12 muffins)

Stir first 3 ingredients and set aside.  Cream butter and sugar, add eggs.  Mix lemon juice and yogurt and add to butter mixture, alternating with flour.  Stir in lemon zest and poppy seeds.

Bake 50 minutes for loaves and 15 minutes for muffins.

Sweet & Sour Ribs

Borrowed from Company's Coming: Slower Cooker Recipes

2C brown sugar packed
1/4 C flour
1/3 C water
1/2 C vinegar
2 tbsp soya sauce
2 tbsp ketchup
1/4 tsp ground ginger
1/4 tsp garlic powder
3 lbs meaty pork spareribs

Combine all ingredients, except ribs, in a sauce pan and boil until thickened.  Layer ribs in slow cooker and pour sauce over top.  Cover and cook on low for 10-12 hours or high for 5-6.

Carrot Health Muffins

Borrowed from High Plains Cookbook

1 C all purpose flour
1C whole wheat flour
1 C raisins
3/4 C brown sugar
1 tbsp cinnamon
1 tsp nutmeg
2 tsp baking soda
1/2 tsp salt
1/2 C chopped nuts
2 eggs
1 egg white
2/3 C plain yogurt (I used vanilla)
2 tsp vanilla
3 C grated carrots
1 C grated apple

Combine flours, raisin, sugar, cinnamon, nutmeg, baking soda, salt and nuts in a large bowl.  In a separate brown whisk eggs, yogurt, vanilla, carrots and apples.  Pour wet ingredients over dry and stir until combined.  Spool into muffins cups and bake for 40 minutes at 350F.  Makes about 18 muffins.

Pizza Rollups





Idea borrowed from Today's Parent Magazine

Focaccia Dough
Pizza Sauce
Toppings (I used ham)
Shredded Cheese

Prepare dough in bread machine. 1/3 of the dough makes about 12 pizza buns. Roll out dough to 1cm thick rectangle and spread with sauce and toppings. Roll from long end and cut with sharp knife. Let rise for 25-40 minutes in a warm place. Bake at 350F for 15-20 minutes.

Sausage Soup

3 turkey sausage
1/2 onion finely chopped
1 tsp minced garlic
1 carrot chopped
1 can chopped tomato's (I used spicy red pepper)
2 C chicken stock
1 tsp basil
1 tsp oregano
Salt & pepper to taste

Brown sausage in a large pot, add onion, garlic and carrots and cook until translucent.  Add chicken stock, tomato's and spices and simmer on low.  Add pasta and cook until tender!

Sweet Dinner Rolls




1/2 C warm water
1/2 C warm milk
1 egg
1/3 C butter
1/3 C sugar
1 tsp salt
3 3/4 flour
1 pckg active dry yeast

Place in bread machine on dough setting. Grease 9x13 pan & placed 16 formed buns in. Cover & let rise 1hr. Bake 10-15 minutes at 400F.

***I know I don't make the best looking buns, but they taste delicious. I am looking for a tutor to help me make well rounded buns :0
